So we're driving through Idaho and I know it's cheesy, but I didn't care - I wanted French Fries and wanted them bad... After a bit of research, I found that most of the spots that seemed to be the highest rated were closed on Sunday, but I came across a new joint in Boise -
The Idaho Fry Company.

It must have been destiny because their "Bourgeois" fries might be the best french fries I've ever had. Fresh, local, hand-cut Idaho potatoes, flash-fried in duck fat and then tossed in black truffle salt. They came out hot and well worth the wait. Perfectly crispy and cut just the right way (so they weren't too starchy) and addictive. We plowed though the fries, dipping them in an array of sauces including: chipotle mayo, black bean, garlic aioli, blue cheese, fry sauce (a secret sauce consisting of ketchup, salt, pepper, and other sauces), sweet mustard, and my personal favorite, blueberry. Dipping in the black truffle salt-dusted fries in the blueberry sauce proved to be the best flavor combo there. So if you ever find youself in Boise, check this place out!

Though their slogan, "Burgers on the Side," did apply, I still had a great buffalo cheeseburger... Again, all local ingredients, cooked to order, and on a fresh, chewy bun. All in all, an amazing meal and well worth the stop off the highway - thank you Reilly and Idaho Fry Company!
